Box Grater (optional)
If you prefer using whole blocks of cheese, you can grate Emmentaler cheese with a box grater, which is a key ingredient in the filling of the Gluten-Free Zucchini Galette. However, if you choose the convenience of pre-grated cheese, you can skip this step and proceed with the pre-grated cheese of your choice.
Brush or Pastry Brush
A brush or pastry brush is handy for applying the egg yolk wash to the edges of the galette, which gives it a beautiful golden finish.

If you're dairy-free, you can substitute cold dairy-free margarine or a vegan butter alternative for the unsalted butter used in the dough. Make sure it's cold and solid when you use it. Additionally, if you don’t have unsalted butter, you can use salted butter, just reduce the salt in the dough by ½.
Gruyère Cheese
If you prefer a different cheese or have dietary restrictions, you can substitute Gruyère with other mild, meltable cheeses like Emmental, Swiss, or a dairy-free cheese if you're vegan.
Egg Yolk (for egg wash)
If you're vegan or allergic to eggs, you can use dairy-free milk, like almond or soy milk, as a wash to give the crust a golden color.
Olive Oil
If you don't have olive oil or prefer a different flavor, you can use vegetable oil, canola oil, or even melted coconut oil. My go-to when I don’t want to use olive oil is avocado oil as it has a neutral flavor, high heating temperature and is heart healthy.

If you're not a fan of onions or have dietary restrictions, you can use shallots, leeks, or scallions as a substitute. They will provide a similar caramelized flavor.
Zucchinis

Ingredients
Gluten Free Dough
1 gluten-free pie crust https://stevesinthekitchen.com/recipe/gluten-free-pie-crust/ (Make a single crust)
Zucchini Filling
2 Small Zucchinis, thinly sliced (I like using zucchinis that are no larger than 1 ½ inches in diameter)
1tsp Kosher Salt
1tbsp Olive Oil
1 Large Onion, thinly sliced
1tbsp Salted Butter (I like using thyme, herbs de provence, or sage.)
1cup Gruyère Cheese
6-10 Kalamata Olives sliced lengthwise in half or quarters (for topping)
1 Egg
Instructions
Prepare the Gluten-Free Crust
Prepare a single gluten-free pie crust according to the recipe found here
Caramelize the Onions
Heat 1 tablespoon olive oil in a skillet over medium-low heat.
Melt 1 tablespoon of butter.
Add the thinly sliced onions, herbs, and cook, stirring occasionally, until they turn a deep golden brown and become caramelized, about 30-40 minutes. Watch the heat to ensure you do not burn the onions. Lower the heat if necessary. Season with salt and pepper to taste. Set aside to cool.
Prepare the Zucchini (While Caramelizing Onions)
While the onions are caramelizing in the skillet, slice the zucchinis into thin 1/8-inch rounds. You can use a knife or a mandoline slicer for even thickness.
Place the sliced zucchini rounds in a mixing bowl and toss them with 1 teaspoon of kosher salt. Ensure that the salt is evenly distributed among the zucchini slices.
Allow the salted zucchini to rest in the bowl for approximately 30 minutes. This resting period will draw out excess moisture from the zucchini, helping to prevent a soggy galette. After 30 minutes, drain the zucchini slices in a colander and gently press them with a clean kitchen towel or paper towels to remove any excess moisture before arranging them on the galette. This step ensures that the zucchini slices are properly prepared to maintain the galette's texture and prevent excess moisture, resulting in a delicious and perfectly cooked Gluten-Free Zucchini Galette.
Assemble the Galette
Preheat your oven to 375°F (190°C).
On a sheet of parchment paper, roll out the chilled dough into a rough circle, about 14 inches in diameter.
Transfer the dough on the parchment to a rimmed baking sheet. Chill in the refrigerator for 15 minutes.
Leaving a 2-inch border, spread the caramelized onions evenly over the dough.
Sprinkle 2/3 of the shredded Emmental or Gruyere cheese over the onions.
Arrange the thinly sliced zucchini in an overlapping pattern on top of the cheese.
Cut each olive in half or quarters and arrange on top of the zucchini layer
Sprinkle the remaining cheese over the zucchini.
Lightly season with salt and pepper to taste.
Carefully fold the edges of the dough over the filling, creating pleats as you go.
Brush the folded edges of the galette with the egg yolk (or cream) wash for a golden finish.
Sprinkle with additional herbs or cracked pepper.
Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the zucchini is tender.
Remove the galette from the oven and let it cool for a few minutes.
Slice, serve, and savor the hearty flavors of fall with this straightforward and gluten-free zucchini galette.
Note
Gluten-Free Flour: I use a blend that I have modified, based on a recipe from ATK, The ATK recipe can be found in this cookbook. That blend does not contain xanthan gum, so I add it separately depending on the recipe.
If you are using a gluten-free blend that is not listed as a one-to-one replacement, it is important to weigh the flour. My gluten-free flour blend weighs 128 grams.
There are, however, many commercially available gluten-free flour blends at your local grocer or online. Here are several that are available from Amazon:
All of these flours do contain xanthan gum. So omit the extra xanthan if using one of these blends. All of the manufacturers promote these products as a one-to-one replacement.
Resting the batter: after mixing the dough, let it chill in the refrigerator for one hour. This allows the gluten-free flour to fully hydrate creating strength and eliminating a gritty texture.
These cookies are best enjoyed in 3 – 5 days. They are on the dryer side and are great with coffee, tea, or red wine.
