The winter months in the Pacific Northwest are gray, rainy, and short on daylight. Because the weather can be so dreary, there’s no better time for comfort food that’s warm, savory, and most importantly, easy to make. So when the chill starts to seep into your bones, there’s nothing quite like a Gluten-Free Winter Squash Galette to lift your spirits. Growing up, squash was never my thing. The only way I’d eat it was drowning in butter and brown sugar – essentially turning a vegetable into candy. Now, I’ve discovered squash can be so much more: a savory, satisfying ingredient that transforms a simple meal into something special.

I chose delicata squash for this galette for good reasons: it’s small and easy to handle, readily available in winter, requires no peeling, and has an eye-appealing shape when sliced. Its sweet, nutty flavor pairs perfectly with gorgonzola and prosciutto. As a bonus, it’s packed with fiber, vitamin A, and vitamin C.

  • A fork can be used to crumble gorgonzola cheese, a key ingredient in the filling of the Gluten-Free Winter Squash Galette, for those who prefer to use whole blocks of cheese. However, if you choose the convenience of pre-crumbled cheese, you can skip this step and proceed with the crumbled cheese of your choice.

  • Gluten free flour blends don’t bind together like a traditional wheat based flour. That’s why I use xanthan gum to hold the dough together. If your gluten-free flour mix contains xanthan gum, you can omit it from the recipe. If you choose to use a recipe that does not contain xanthan gum, the dough may be slightly more fragile without it, so handle it carefully.

Unsalted Butter

  • If you’re dairy-free, you can substitute cold dairy-free margarine or a vegan butter alternative for the unsalted butter. Make sure it’s cold and solid when you use it. Additionally, if you don’t have unsalted butter, you can use salted butter, just reduce the salt in the dough by ½.

Cheese

  • If you prefer a different cheese or have dietary restrictions, you can substitute any other mild, meltable cheeses like White Cheddar or Gruyère for the Mozzarella. You can also easily substitute Blue Cheese for Gorgonzola. Or you can use a dairy-free cheese if you’re vegan. Of course you can make this without cheese, however eliminating the cheese will definitely change the flavor of the dish.

Olive Oil

  • If you don’t have olive oil or prefer a different flavor, you can use vegetable oil, canola oil, or even melted coconut oil. My go-to when I don’t want to use olive oil is avocado oil as it has a neutral flavor, high heating temperature and is heart healthy.

Onions

  • If you’re not a fan of onions or have dietary restrictions, you can use shallots, leeks, or scallions as a substitute. They will provide a similar caramelized flavor.

Delicata Squash

  • If you can’t find delicata squash, butternut squash is an excellent substitute. It has a similar sweet, nutty flavor and creamy texture when cooked, making it versatile for roasting or pureeing. Another option is acorn squash, which also has edible skin and a slightly sweeter taste. For a quicker alternative, you might consider using sweet potatoes, which bring a comparable sweetness and can be easily cubed and roasted

Prosciutto

  • If prosciutto isn’t available, bacon is a common substitute that can provide a similar salty, savory flavor. Opt for thin-cut bacon to mimic the texture of prosciutto when crisped. For a less fatty option, turkey bacon can work as well, though it has a milder flavor. If you’re looking for a vegetarian alternative, smoked tempeh or mushrooms sautéed in olive oil can add depth and umami to your dish without the meat.

Instructions

Prepare the Gluten-Free Crust

  1. Prepare a single gluten-free pie crust according to the recipe found here.

    Note: For this recipe I substituted 1/2 cup of the gluten-free flour blend with 1/2 cup of buckwheat flour. 

Caramelize the Onions

  1. Heat 1 tablespoon olive oil and 1 tablespoon of butter in a skillet over medium-low heat. 

  2. Add the thinly sliced onions, herbs, salt and pepper (to taste), and cook, stirring occasionally, until they turn a deep golden brown and become caramelized, about 30-40 minutes. Watch the heat to ensure you do not burn the onions. Lower the heat if necessary. Season with salt and pepper to taste. Set aside to cool.

Prepare the Squash Prosciutto and Cheese, (While Caramelizing Onions)

  1. While the onions are caramelizing in the skillet…

    • Wash the delicata squash, cut in half lengthwise and remove the seeds. Slice into ¼” have circles. Saute the squash on the stove in a tablespoon of olive oil until the slices begin to soften. Set aside.
    • Crumble the gorgonzola using with fork. Shred the Mozzarella with a box grater. Set aside. 
    • Chop the prosciutto, saute the chopped slices over medium heat in a frying pan until slightly crisp.

Assemble the Galette

    • Preheat your oven to 375°F (190°C).
    • On a sheet of parchment paper, roll out the chilled dough into a rough circle, about 14 inches in diameter.
    • Carefully transfer the dough on the parchment to a rimmed baking sheet. Chill in the refrigerator for 10 minutes. Note that depending on the size of your baking sheet, the dough will hang over the edges of the pan.
    • Remove the dough from the refrigerator; Leaving a 2--3 inch border, spread the Mozzarella evenly over the dough.
    • Next spread caramelized onions over the Mozzarella .
    • Place the sautéed squash slices in an even pattern covering the cheese and onions.
    • Arrange the crisp prosciutto and gorgonzola on top.

    • Bake in the preheated oven for 35 minutes, or until the crust is golden brown.
