  1. Prepare a single gluten-free pie crust according to the recipe found here

Caramelize the Onions

    • Heat 2 tablespoons olive oil in a skillet over medium-low heat.
    • Melt 1 tablespoon of butter.
    • Add the thinly sliced onions, herbs, and cook, stirring occasionally, until they turn a deep golden brown and become caramelized, about 30-40 minutes.
    • Add 2-3 tablespoons of water to the skillet. The water will help to deglaze the pan and speed up the caramelization process. Bring to a simmer, allowing the water to evaporate completely. This will create steam, which helps to break down the onion's natural sugars and prevent burning.
    • Watch the heat to ensure you do not burn the onions. Lower the heat if necessary.
    • Season with salt and pepper to taste.
    • Set aside to cool.

    • Thyme: Wash several sprigs of fresh thyme under cold water. Pat them dry with a paper towel. Pluck the leaves from the stems, discarding the stems. You should have approximately 1-2 teaspoons of thyme leaves. Set aside.
    • Kalamata Olives: Slice each olive in half. Look for any pieces of pits. Set aside.
    • Cheese: Shred the Gruyere and Parmesan Cheese using a box grater or hand held shredding tool. Set aside.

    • Springle with the chopped shallots and thyme leaves
    • Place the sliced kalamata olives evenly on the galette filling.
    • Sprinkle with the shredded parmesan cheese.
    • Lightly season with salt and pepper to taste.
