Winter has settled in, the days are shorter and the air is crisp. At this time I seek comfort in my kitchen. The Pacific Northwest, with its gray skies and drizzling rain, calls for warm, sweet treats that can brighten even the dreariest of days. There’s no better way to embrace this season than with a homemade Gluten-Free Caramel Pear Galette that celebrates the flavors of winter.

Rediscovering Pears: Not some mushy fruit from a can!

I hated pears as a kid. We never ate them fresh, only syrupy blobs pulled from a can or mason jar. Certainly not made into a special dessert. However, as an adult I’ve come to appreciate their versatility in the kitchen. Simply baked…made into a buttery topping for toast…tossed in a salad with a savory cheese…delicately sauteed and used in a tart – pears are subtly sweet, and can be a nice change from apples. And when caramelized, pears transform into a rich filling that elevates any dish, especially my gluten-free caramel pear galette.

Unsalted Butter
  • If you’re dairy-free, you can substitute cold dairy-free margarine or a vegan butter alternative for the unsalted butter. Make sure it’s cold and solid when you use it. Additionally, if you don’t have unsalted butter, you can use salted butter, just reduce the salt in the dough by ½.
Pears

Caramel Pear Filling

Instructions

Prepare the Gluten-Free Crust

  1. Prepare a single gluten-free pie crust according to the recipe found here.

Caramelize the Pears

    • Heat 1/4 cup unsalted butter in a skillet over medium-low heat.
    • Add 1/2 cup brown sugar.
    • Carefully stir over medium-low heat until the mixture begins to boil and the butter/sugar is completely emulsified.
    • Whisk in cream - the mixture will bubble and begin to thicken. Keep on low heat and add 1/4 teaspoon kosher salt and 1 teaspoon vanilla extract and ½ teaspoon cinnamon (optional).

    Melting butter in a pan.      

    • Peel pears, cut into 4 quarters lengthwise, cut out core and slice into ¼” slices.
    • Place pear slices into a pan with caramel sauce and saute until soft.
    • Remove pear slices from the pan with a slotted spoon and set aside to cool. (I like to use a rimmed cookie sheet to lay all of the slices flat.
    • Reserve remaining caramel liquid until you are ready to assemble the galette.

Assemble the Galette

    • Preheat your oven to 375°F (190°C).
    • On a sheet of parchment paper, roll out the chilled dough into a rough circle, about 14 inches in diameter.
    • Carefully transfer the dough on the parchment to a rimmed baking sheet. Chill in the refrigerator for 10 minutes. Note that depending on the size of your baking sheet, the dough will hang over the edges of the pan.
    • Remove the dough from the refrigerator; Leaving a 2-3 inch border, arrange the cooled pear slices in an overlapping circular pattern starting 2 inches from the outside of the dough. You should be able to create 2-3 overlapping rings.
    • Take the remaining caramel and drizzle over the pears.

     

    • Fold the edges of the dough over onto the filling.
    • Using a pastry brush, gently brush the cream or egg whites across the entire surface of the dough edge, then sprinkle the dough edges with coarse granulated sugar.
    • Sprinkle sliced almonds over the galette.
    • Bake in the preheated oven for 25 - 35 minutes, or until the crust is golden brown.

     

Serve and Enjoy

    • Remove the galette from the oven and let it cool for a few minutes.
    • If you have caramel sauce left over, drizzle on top of the cooled galette.
    • Slice, serve, and enjoy flavors of the Gluten-Free Caramel Pear Galette.
