Instructions

Prepare the Gluten-Free Crust

  1. Prepare a single gluten-free pie crust according to the recipe found here.

Prepare the Galette Filling

    • Place the frozen blueberries in a medium sized bowl. Let rest on a counter for 30-60 minutes. After resting, strain and discard the excess liquid.
    • Add the sugar, flour, cinnamon and a pinch of salt to the blueberries. Toss together lightly.
    • Set aside until assemble.

         

Assemble the Galette

    • Preheat your oven to 375°F (190°C).
    • On a sheet of parchment paper, roll out the chilled dough into a rough circle, about 14 inches in diameter.
    • Carefully transfer the dough on the parchment to a rimmed baking sheet. Chill in the refrigerator for 10 minutes. Note that depending on the size of your baking sheet, the dough will hang over the edges of the pan.
    • Remove the dough from the refrigerator; Leaving a 2-3 inch border, spread about 1/2 cup of lemon curd.
    • Pour the blueberry mixture on top of the lemon curd

     

    • Fold the edges of the dough over onto the filling.
    • Using a pastry brush, gently brush the cream or egg whites across the entire surface of the dough edge, then sprinkle the dough edges with coarse granulated sugar.
    • Add a few pieces of butter to the open top of the galette.
    • Bake in the preheated oven for 25 - 35 minutes, or until the crust is golden brown.

Serve and Enjoy

    • Remove the galette from the oven and let it cool 30 minutes.
    • Sprinkle lemon zest over the top of the galette as it cools
