Gluten-Free Blueberry and Lemon Curd Galette – A Sweet and Tangy Celebration of Spring
Welcome Spring with a Burst of Flavor—Like a Dance Across Your Taste Buds
Winter has been long and grey in the northwestern part of the US. As the season fades…daylight comes early and spring blossoms. Now it’s time to embrace bright, fresh flavors that awaken the senses. This week, the Weekly Galette series brings you a delightful creation: a Gluten-Free Blueberry Galette with Lemon Curd. Sweet, tangy, and vibrant, this galette is the perfect way to celebrate the season.
Sweet and Zesty—Like Dance Partners in Step
This galette combines the juicy sweetness of blueberries with the tangy brightness of lemon curd. The homemade or store-bought lemon curd is silky and rich, made with fresh lemon juice, zest, eggs, butter, and vanilla. Frozen blueberries add a burst of fruitiness, enhanced by a touch of sugar and cinnamon. Together, they move in perfect time.

The Magic of a Flaky Gluten-Free Crust–the Foundation of the Culinary Dance
The gluten-free dough cradles the filling beautifully, creating a rustic yet elegant dessert. The crust’s golden edges are brushed with cream (instead of eggs) to enhance the color. Then sprinkled with coarse sugar for texture. Paired with vanilla ice cream mixed with extra lemon curd. This galette becomes a show-stopping dessert that’s as delicious as it is visually stunning.
A Dessert That Brings People Together
Food has always been about connection, and this galette is no exception. Whether you’re serving it at a spring gathering or enjoying it with loved ones at home, this dish invites conversation and joy. The combination of flavors and textures creates a shared rhythm—a sweet harmony that makes everyone want to sway. It is unforgettable—a dessert that turns ordinary moments into cherished memories.
On these dark, damp Pacific Northwest days, a slice of this galette offers a moment of pure comfort – proving that sometimes the simplest desserts can turn an ordinary evening into something memorable.

Ingredients
These ingredients come together to create a Gluten-Free Blueberry and Lemon Curd Galette that’s both flavorful and suitable for those with gluten sensitivities.
Gluten-Free Dough
- Flaky and tender gluten-free crust made from a mix of gluten-free flours, butter, and a touch of sweetener. This provides the perfect base for the galette, offering a nutty flavor. Follow the instructions found here for my gluten free pie dough recipe.
Lemon Curd
- Silky and tangy lemon curd, either homemade or store-bought, adds brightness and creaminess to the galette. Made with fresh lemon juice, zest, eggs, butter, and sugar, it’s the quintessential spring flavor.
Frozen Blueberries
- Frozen blueberries, tossed with a bit of sugar and allowed to thaw, release their juicy sweetness while baking. Straining excess juice prevents a soggy filling.
Gluten-Free Flour
- Helps to thicken the blueberry filling, ensuring it has the perfect consistency without becoming too runny during baking.
Granulated Sugar
- Adds balanced sweetness to the blueberries, enhancing their natural flavor and complementing the tangy lemon curd.
Cinnamon
- A sprinkle of ground cinnamon provides warmth and depth to the filling, adding a subtle spice that complements both the blueberries and lemon.
Kosher Salt
- Enhances all the flavors in both the crust and the filling. A pinch is essential to balance the sweetness and acidity.
Lemon Zest
- Adds extra zesty brightness to the blueberry filling, intensifying the lemon flavor and complementing the curd.
Egg White (for egg wash) or cream
- An egg white mixed with a bit of water creates an egg wash. Brushed onto the galette’s edges before baking. It gives the crust a beautiful golden color and a glossy finish. If you prefer not to use eggs, cream is a great alternative.
Vanilla Ice Cream Mixed with Extra Lemon Curd
- I whisk melted vanilla ice cream with lemon curd and refreeze. This creates an “over-the-top” dessert experience.
Coarse Grained Sugar and Butter
- Used to sprinkle on the folded edges of the galette just prior to baking. This will add a crunchy and decorative texture to the pastry. I also add a few pieces of butter to the filling to enhance the richness of the dessert.
Equipment
Essential Equipment to Prepare the Gluten-Free Blueberry and Lemon Curd Recipe:
Food Processor (optional)
- A food processor is handy for making the gluten-free dough quickly and efficiently. However, you can also mix the dough by hand if you don’t have a food processor.
Rolling Pin
- You’ll need a rolling pin to roll out the dough into a circle of the desired size. This will help create the crust for your galette.
Mixing Bowls
- Use mixing bowls to combine various ingredients throughout the recipe, including the dough and filling components.
Measuring Cups and Spoons
- Measuring cups are essential for accurately measuring ingredients like flour, water, and sugar. Measuring spoons help you measure smaller quantities of ingredients like salt and xanthan gum.
Rimmed Baking Sheet
- A rimmed baking sheet is also essential for baking the galette in the oven. It provides a flat surface for the galette to cook evenly.
Parchment Paper
- I use parchment paper is to line the baking sheet. This prevent the galette from sticking. It also makes it easier to transfer the galette in and out of the oven.
Zester
- You’ll need a zester to get the best flavor from the lemon.
Pastry Brush
- A pastry brush is used to apply the wash to the edges for a golden finish.
Oven
- You’ll use a conventional oven to bake the galette to perfection.
Cooling Rack (Optional)
- A cooling rack can help cool the galette evenly once it’s removed from the oven.
Substitutions
Remember to consider any dietary restrictions or preferences when making substitutions. The key is to adapt the recipe to needs while still maintaining the structure and flavors of the galette.
These ingredients have easy substitutions.
Xanthan Gum
- Gluten free flour blends don’t bind together like a traditional wheat based flour. I use xanthan gum to hold the dough together. If your gluten-free flour mix contains xanthan gum, you can omit it from the recipe. If you choose to use a recipe that does not contain it, the dough will be more fragile without it, so handle it carefully.
Unsalted Butter
- If you’re dairy-free, you can substitute cold dairy-free margarine or a vegan butter alternative for the unsalted butter. Make sure it’s cold and solid when you use it. Additionally, if you don’t have unsalted butter, you can use salted butter, just reduce the salt in the dough by ½.
Cinnamon
- Try nutmeg or cardamom for an alternative spice note.
Egg Yolk (for egg wash)
- If you’re vegan or allergic to eggs, you can use dairy-free milk, like almond or soy milk, as a wash to give the crust a golden color.
Remember to consider any dietary restrictions or personal preferences when making substitutions. The key is to adapt the recipe to your needs while still maintaining the overall structure and flavors of the galette. Enjoy your customized Gluten-Free Blueberry and Lemon Curd Galette!

Note
Gluten-Free Flours
When it comes to baking gluten-free, the type of flour you use can significantly impact the texture and flavor of your final product. Here are some important tips regarding gluten-free flours for your Gluten-Free Banana Muffins recipe:
1. Homemade Flour Blend
I use a custom gluten-free flour blend that I make myself, which weighs approximately 140 grams per cup. This blend typically includes a mix of gluten-free flours such as white and brown rice flour, potato starch, tapioca starch, sorghum and milk powder, providing a balanced texture and flavor for baking.
2. Store-Bought Gluten-Free Flours
If you prefer to use a store-bought gluten-free flour blend, it's crucial to check the packaging for the weight per cup, as this can vary between brands. Each manufacturer may have a different formulation, which affects the density and weight of their flour.
Here are several that are available from Amazon:
- King Arthur Measure for Measure Gluten-Free Flour
- Bob’s Red Mill Gluten Free 1 to 1 Baking Flour
- Cup4Cup Gluten Free Multipurpose Flour
None of these flours contain xanthan gum. So if your recipe calls for xanthan gum, omit the extra xanthan if using one of these blends. All of the manufacturers promote these products as a one-to-one replacement.
3. Measuring for Accuracy
For the most accurate results, I highly recommend using a digital food scale to measure your gluten-free flour. Measuring by weight ensures that you have the correct amount, leading to more consistent and successful baking outcomes. This method eliminates the variability that can come from measuring by volume, especially with gluten-free flours, which can be compacted or aerated differently.
By paying attention to these details, you'll set yourself up for success in creating a delicious and moist Gluten-Free Banana Muffins. Happy baking!
