Galettes are one of my favorite things to make because they’re versatile AND forgiving. The free-form shape is not constrained by a pan or perfect crimping. Rather, a galette embraces imperfections, making them approachable for cooks of all levels. As I fold the edges of the dough over this smoky, cheesy filling, I’m reminded that comfort food doesn’t have to be complicated—it can be simple, satisfying, and full of heart.

Gluten-Free Dough

Garlic-Infused Olive Oil
Used as a base on the galette dough, this oil adds a subtle, savory depth to the dish. Its gentle garlic flavor enhances the overall profile without overpowering the smoky and sweet Barbeque notes. Garlic-infused olive oil: place a minced garlic clove in ¼ cup of olive oil, simmer in a small saucepan for 10 minutes or place in a microwave-safe bowl and heat on high for 30 seconds. Let rest on the counter for 30 minutes. Strain out the garlic. Drizzle on soup once in the bowl. (Note, do not save any remaining garlic oil as there is a risk of botulism after two hours on the counter. I use a commercially prepared oil that eliminates this risk.)

Rolling Pin
You'll need a rolling pin to roll out the dough into a circle of the desired size. This will help create the crust for your galette.
Mixing Bowls
Use mixing bowls to combine and mix various ingredients throughout the recipe, including the dough and filling components.
Measuring Cups and Spoons
Measuring cups are essential for accurately measuring ingredients like flour, water, and grated cheese. Measuring spoons help you measure smaller quantities of ingredients like salt, xanthan gum, sugar, and herbs.
Rimmed Baking Sheet
A rimmed baking sheet is essential for baking the galette in the oven. It provides a flat surface for the galette to cook evenly.
Parchment Paper
I use parchment paper is to line the baking sheet and prevent the galette from sticking. It also makes it easier to transfer the galette in and out of the oven.
Knife and Cutting Board
You'll need a knife and cutting board to slice the onions and jalapeños.
Oven
You'll use a conventional oven to bake the galette to perfection.
Box Grater (optional)
If you prefer using whole blocks of cheese, you can grate cheese with a box grater, which is a key ingredient in the filling of the Galette. However, if you choose the convenience of pre-grated cheese, you can skip this step and proceed with the pre-grated cheese of your choice.
Brush or Pastry Brush (optional)
A brush or pastry brush is handy for applying the oil to the base and to the edges of the galette, which gives it a beautiful golden finish.
Cooling Rack (Optional)
While not essential, a cooling rack can help cool the galette evenly once it's removed from the oven. Just don’t place a hot pan directly on a heat sensitive counter.

Gluten-Free Flour:
You can use a store-bought gluten-free all-purpose flour mix, but make sure it's suitable for baking. You can also make your own gluten-free flour mix using a combination of rice flour, potato starch, tapioca starch, and xanthan gum if it's not included in the mix. Adjust the ratios according to your preference. Here are some readily available options.
Xanthan Gum:
Gluten free flour blends don’t bind together like a traditional wheat based flour. That why I use xanthan gum to hold the dough together. If your gluten-free flour mix contains xanthan gum, you can omit it from the recipe. If you choose to use a recipe that does not contain xanthan gum, the dough may be slightly more fragile without it, so handle it carefully.
Unsalted Butter
If you're dairy-free, you can substitute cold dairy-free margarine or a vegan butter alternative for the unsalted butter used in the dough. Make sure it's cold and solid when you use it. Additionally, if you don’t have unsalted butter, you can use salted butter, just reduce the salt in the dough by ½.
Garlic Infused Olive Oil
If you don’t want to use garlic infused olive oil, simply use olive oil or if you don’t have olive oil, use avocado oil…get creative and use what you have in your kitchen.
Cheese
If you prefer a different cheese or have dietary restrictions, you can substitute with other mild, meltable cheeses like Swiss, white cheddar, or a dairy-free cheese if you're vegan.
Seasonings
Feel free to adjust the seasonings according to your taste. Experiment with different herbs and seasonings that complement the savory flavor of the galette.

Gluten Free Dough
1 gluten-free pie crust https://stevesinthekitchen.com/recipe/gluten-free-pie-crust/ (Make a single crust)
Barbeque Chicken Filling
3tbsp Garlic Infused Olive Oil (See note below.)
1/2cup Barbeque Sauce (Divided. Read the label to ensure it is gluten-free.)
1/2cup Mozzarella Cheese (Shredded)
2cups Cooked Chicken (Shredded)
1/2tsp Kosher Salt (Divided. See notes below.)
1/2tsp Smoked Gouda (Shredded)
1/4medium Red Onion (Sliced thin)
1/4cup Corn Kernels
1/4cup Cilantro Fresh Leaves
1/3cup Parmesan (Shredded)
1/2medium Jalapeño (Sliced into rounds, seeds removed.)
Instructions
Prepare the Gluten-Free Crust

Prepare a single gluten-free pie crust according to the recipe found here.
Roll out the gluten-free pastry dough to a thickness of about 1/8" into a circle approximately 14” in diameter.
Prepare Ingredients

Slice onion and jalapeño.
In a medium-sized bowl toss cooked and shredded chicken with barbeque sauce.
Assemble the Galette

Gather your ingredients and preheat your oven to 375°F (190°C).
Leaving a 2” border, brush the dough with garlic oil to add a savory flavor. See notes below.
Spread ¼ of Barbeque sauce over the dough (remember to leave a 2” border).
Layer on ½ cup of Mozzarella cheese.
Toss the shredded chicken with ¼ cup of Barbeque sauce and arrange the shredded Barbeque chicken over the first layer of sauce and cheese.
Sprinkle ¼ cup of shredded Smoked Gouda cheese over the filling.
Add sliced red onion, sweet corn kernels, chopped cilantro, and jalapeño.
Fold and Bake

Fold the edges of the dough over onto the filling.
Brush the folded dough edges with garlic infused olive oil.
Lightly season the folded edge with salt and pepper (optional).
Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.

Gluten-Free Flours
When it comes to baking gluten-free, the type of flour you use can significantly impact the texture and flavor of your final product. Here are some important tips regarding gluten-free flours for your Gluten-Free Banana Muffins recipe:
1. Homemade Flour Blend
I use a custom gluten-free flour blend that I make myself, which weighs approximately 140 grams per cup. This blend typically includes a mix of gluten-free flours such as white and brown rice flour, potato starch, tapioca starch, sorghum and milk powder, providing a balanced texture and flavor for baking.
2. Store-Bought Gluten-Free Flours
If you prefer to use a store-bought gluten-free flour blend, it's crucial to check the packaging for the weight per cup, as this can vary between brands. Each manufacturer may have a different formulation, which affects the density and weight of their flour.
None of these flourscontain xanthan gum. So if your recipe calls for xanthan gum, omit the extra xanthan if using one of these blends. All of the manufacturers promote these products as a one-to-one replacement.
3. Measuring for Accuracy
For the most accurate results, I highly recommend using a digital food scale to measure your gluten-free flour. Measuring by weight ensures that you have the correct amount, leading to more consistent and successful baking outcomes. This method eliminates the variability that can come from measuring by volume, especially with gluten-free flours, which can be compacted or aerated differently.

Kosher Salt
You can use kosher salt in this recipe; however, the crystal of table salt and kosher salt are not the same. So a teaspoon of one is not the same as a teaspoon of the other. Here are equivalents for two commonly available kosher salt brands:
To Replace: 1 teaspoon table salt
2 teaspoon diamond Crystal Kosher Salt
1 1/2 teaspoons Morton Kosher Salt
Garlic-infused olive oil
You can use either a commercially prepared garlic olive oil or make your own. To make garlic infused olive oil, place a minced garlic clove in ¼ cup of olive oil, simmer in a small saucepan for 10 minutes or place in a microwave-safe bowl and heat on high for 30 seconds. Let rest on the counter for 30 minutes. Strain out the garlic. Use according to the recipe. (Note, do not save any remaining garlic oil as there is a risk of botulism if stored longer than a few days. Here is. I use a commercially prepared oil that eliminates this risk.)
Note, you can use either a prepared garlic olive oil, or make your own by heating ¼ cup of olive oil with 1 chopped garlic clove over medium heat. Strain out and discard the garlic after heating for 10-15 minutes.
