There’s something magical about the aroma of potatoes, cheese, and herbs mingling in the oven. As I am eating and writing about my latest creation—a Gluten-Free Au Gratin Potato Galette, I’m struck by how simple ingredients can transform into something truly extraordinary. This rustic, free-form dish showcases thinly sliced Yukon Gold potatoes nestled in a buttery gluten-free crust, complemented by layers of creamy Gruyère cheese and fragrant thyme. It’s more than just a meal; it’s an amazing marriage of flavors that you don’t often taste together…after all, how often do you have a potato pie?

So when the skies are gray and cloudy bring some warmth back to your day with a savory, homemade Gluten-Free Au Gratin Potato Galette. As the galette bakes, the enticing scents of onion and thyme mingle with the rich aroma of melting cheese, promising a truly satisfying experience that will wrap you in culinary comfort.

Rediscovering Potatoes: From Simple Side to Stunning Centerpiece

Potatoes are a staple in many households, but they were often relegated to the role of a simple side dish. But potatoes can be so much more: a versatile ingredient that transforms a humble meal into something special. This Gluten-Free Au Gratin Potato Galette elevates the humble spud to new heights, combining the creamy decadence of traditional au gratin potatoes with the rustic elegance of a galette with a buttery and flakey crust.

Gluten-Free Au Gratin Potato Galette - Just out of the Oven - Resting on Parchment Paper

The beauty of this dish lies in its simplicity and adaptability. The free-form shape of the galette embraces imperfections, making it approachable for cooks of all levels. As I gently fold the edges of the gluten-free crust over the savory potato and cheese filling, I’m reminded that sometimes the most delicious meals come from embracing what’s available in our pantry and allowing ourselves the freedom to experiment.

A Seasonal Favorite: Why Potatoes Shine in this Galette

This Gluten-Free Au Gratin Potato Galette captures the essence of winter baking – transforming simple ingredients into something extraordinary. The gluten-free crust provides sturdy foundation for the layers of thinly sliced potatoes that have been simmered in butter and cream and topped with cheese, creating a dish that’s both rustic and refined. I chose Yukon Gold potatoes for this galette because of their buttery flavor and creamy texture when cooked.

Nourishment Meets Indulgence

Moreover, potatoes are not just delicious; they’re also packed with nutrients like vitamin C, potassium, and fiber, making them a wholesome addition to this indulgent treat. OK, I get that the butter, cream and cheese take this one outside of the healthy zone…but on these short, damp winter days, a slice of this galette offers a moment of pure comfort.

As I slice into the golden, crispy crust and watch the steam rise from the perfectly cooked potatoes, I’m filled with a sense of satisfaction. This Gluten-Free Au Gratin Potato Galette is more than just a meal; it’s a celebration of comfort food reimagined. It’s about creating something delicious from humble ingredients, exploring new culinary territories, and relishing in the joy of homemade food.

Ingredients

Gluten-Free Au Gratin Potato Galette - Ingredients Ready to Go

These ingredients come together to create a gluten-free au gratin potato galette that’s both flavorful and suitable for those with gluten sensitivities.

  • Follow the instructions found here for my gluten free pie dough recipe.
Egg Yolk (for egg wash)
  • An egg yolk mixed with a bit of water creates an egg wash. It’s brushed onto the galette’s edges before baking to give the crust a beautiful golden color and a glossy finish.
Olive Oil
  • Use olive oil to sauté and caramelize the onions. It adds a subtle fruity and earthy flavor to the dish and helps soften and sweeten the onions.
Unsalted Butter
  • Unsalted butter lends a creamy and rich quality to the caramelized onions.
Onions
  • Use sliced and caramelized to bring a sweet, rich, and savory flavor to the galette. The slow cooking process turns them soft and golden brown, enhancing their natural sweetness.
Thyme, Sage, or Herbs de Provence
  • Aromatic herbs are a wonderful addition, providing a burst of flavor and aroma. Thyme is earthy, and slightly lemony note. Sage is warm, and savory. Herbs de Provence is a blend of herbs like rosemary, marjoram, and lavender, offering a fragrant and harmonious flavor profile. When caramelized with the onions, they infuse a rich, savory essence that elevates the overall taste of the galette. Sprinkling some fresh herbs on top of the assembled galette enhances its visual appeal and introduces a pop of freshness.
Yukon Gold Potatoes
  • Yukon Golds are a versatile, all-purpose potato renowned for its golden-yellow flesh. These potatoes feature a naturally buttery flavor and a unique texture that bridges the gap between starchy russet and waxy red potatoes. Their smooth, creamy consistency and medium-yellow flesh make them ideal for this galette.
Gruyere Cheese
  • A Swiss cheese known for its nutty and fruity flavor, melts into a creamy texture that enhances dishes like quiches, galettes, and fondues. In this recipe, it adds a cheesy richness to the filling.
Cream
  • Heavy cream is used to saute the potatoes before assembling the galette. As you saute the sliced potatoes the cream reduces down and combines with the starch in the potatoes to create a rich sauce for the galette.
Garlic
  • Garlic is simmered in the cream to add depth of flavor and a warm savoriness to the galette.
Salt and Pepper:
  • Salt and pepper are common seasonings used to enhance the overall flavor of the galette. They add a necessary savory element to balance the sweetness of the caramelized onions.

Equipment

Essential Equipment to Prepare the Gluten-Free Au Gratin Potato Galette Recipe. Make sure to have them ready before you start cooking for a smooth and enjoyable cooking experience.

Food Processor (optional)
  • A food processor is handy for making the gluten-free dough quickly and efficiently. However, you can also mix the dough by hand if you don’t have a food processor.
Rolling Pin
  • You’ll need a rolling pin to roll out the dough into a circle of the desired size. This will help create the crust for your galette.
Mixing Bowls
  • Use mixing bowls to combine and mix various ingredients throughout the recipe, including the dough and filling components.
Measuring Cups and Spoons
  • Measuring cups are essential for accurately measuring ingredients like flour, water, and grated cheese. Measuring spoons help you measure smaller quantities of ingredients like salt, xanthan gum, sugar, and herbs.
Skillet
  • Use a skillet or frying pan to caramelize the onions. You’ll use it to melt butter, cook the onions until they become soft and caramelized, and add herbs and sugar for flavor. A skillet is also used to saute the sliced potatoes.
Rimmed Baking Sheet
  • A rimmed baking sheet is essential for baking the galette in the oven. It provides a flat surface for the galette to cook evenly.
Parchment Paper
  • I use parchment paper is to line the baking sheet and prevent the galette from sticking. It also makes it easier to transfer the galette in and out of the oven.
Oven
  • You’ll use a conventional oven to bake the galette to perfection.

Knife and Cutting Board:

  • You’ll need a knife and cutting board to thinly slice the potatoes and onions.
Mandolin Slicer (optional)
  • Use a mandolin slicer, to get perfectly sliced potatoes every time.
Box Grater (optional)
  • If you prefer using whole blocks of cheese, you can grate the Mozzarella cheese with a box grater. However, if you choose the convenience of pre-grated cheese, you can skip this step and proceed with the pre-grated cheese of your choice.
Cooling Rack (Optional)
  • Use a rack to help cool the galette evenly once you remove from the oven. Just don’t place a hot pan directly on a heat sensitive counter.
Pastry Brush (Optional)
  • Use a pastry brush to apply the egg yolk wash to the edges of the galette for a golden finish. You can also use a clean brush or your fingers for this step.

Gluten-Free Au Gratin Galette Substitutions

Remember to consider any dietary restrictions or personal preferences when making substitutions. The key is to adapt the recipe to your needs while still maintaining the overall structure and flavors of the galette. Enjoy your customized Au Gratin Potato Galette!

Xanthan Gum
  • Gluten free flour blends don’t bind together like a traditional wheat based flour. That’s why I use xanthan gum to hold the dough together. If your gluten-free flour mix contains xanthan gum, you can omit it from the recipe. If you choose to use a recipe that does not contain xanthan gum, the dough may be slightly more fragile without it, so handle it carefully.
Unsalted Butter
  • If you’re dairy-free, you can substitute cold dairy-free margarine or a vegan butter alternative for the unsalted butter. Make sure it’s cold and solid when you use it. Additionally, if you don’t have unsalted butter, you can use salted butter, just reduce the salt in the dough by ½.
Cheese
  • If you prefer a different cheese or have dietary restrictions, you can substitute any other mild, meltable cheeses like White Cheddar or Swiss. Or you can use dairy-free cheese if you’re vegan. Of course you can make this without cheese, however eliminating the cheese will definitely change the flavor of the dish.

Olive Oil

  • If you don’t have olive oil or prefer a different flavor, you can use vegetable oil, canola oil, or even melted coconut oil. My go-to when I don’t want to use olive oil is avocado oil as it has a neutral flavor, high heating temperature and is heart healthy.
Onions and Garlic
  • If you’re not a fan of onions and garlic, or have dietary restrictions, you can eliminate altogether, or you can use shallots, leeks, or scallions as a substitute. They will provide a similar caramelized flavor.

Yukon Gold Potatoes

  • If you can’t find delicata Yukon Gold Potatoes, red or yellow potatoes are an excellent substitute. Both have similar texture and hold their shape when sauteed.
Egg Yolk (for egg wash)
  • If you’re vegan or allergic to eggs, you can use dairy-free milk, like almond or soy milk, as a wash to give the crust a golden color.
Seasonings
  • Feel free to adjust the seasonings according to your taste. You can add herbs like thyme, rosemary, or basil to enhance the flavor.

What to serve with Gluten-Free Au Gratin Potato Galette?

The Gluten-Free Au Gratin Potato Galette is a versatile dish that can be enjoyed on its own as a delightful meal. However, if you’d like to enhance the dining experience and create a well-rounded meal, here are some serving suggestions and side dishes that pair well with the galette:

Mixed Green Salad
  • A simple salad with fresh mixed greens, cherry tomatoes, cucumbers, and a light vinaigrette dressing can complement the savory flavors of the galette and provide a refreshing contrast. Or, instead of just a simple mixed green salad, consider adding roasted nuts or seeds for added texture and flavor. A sprinkle of feta or goat cheese can also enhance the salad, making it more substantial.
Quinoa Salad
  • A quinoa salad with roasted vegetables and a citrus vinaigrette can add a nutritious and colorful touch. The nutty flavor of quinoa pairs well with the savory galette, while the fresh vegetables provide a delightful crunch.
Sausage
  • If you don’t want to go vegetarian for your meal, you can serve a variety of sausages with the au gratin galette, including smoked sausage, Italian sausage, chorizo, or Polish kielbasa.
Soup
  • Serve a warm bowl of soup alongside the galette. Options like tomato soup, butternut squash soup, or a hearty vegetable soup can make for a satisfying meal combination.
Roasted Vegetables
  • Roasted seasonal vegetables, such as carrots, Brussels sprouts, or sweet potatoes, can be a great side dish. The caramelized flavors of roasted veggies harmonize well with the galette’s richness.
Fruit Salad
  • A refreshing fruit salad with a mix of seasonal fruits like berries, melons, and citrus can provide a sweet contrast to the galette’s savory flavors.

Note

  • Gluten-Free Flour: I use a blend that I have modified, based on a recipe from ATK, The ATK recipe can be found in this cookbook. That blend does not contain xanthan gum, so I add it separately depending on the recipe.
  • If you are using a gluten-free blend that is not listed as a one-to-one replacement, it is important to weigh the flour. My gluten-free flour blend weighs 140 grams.
  • There are, however, many commercially available gluten-free flour blends at your local grocer or online. Here are several that are available from Amazon:
  • All of these flours do contain xanthan gum. So omit the extra xanthan if using one of these blends. All of the manufacturers promote these products as a one-to-one replacement.

Frequently Asked Questions: Feel free to ask any additional questions you may have about the Gluten-Free Au Gratin Galette recipe, and I'll be happy to assist!

Expand All:
Can I use regular all-purpose flour instead of gluten-free flour for the dough?

Yes, you can use regular all-purpose flour if you don't have dietary restrictions. The dough will have a different texture and flavor, but it will work just fine.

What is the purpose of xanthan gum in gluten-free baking?

Xanthan gum is a common additive in gluten-free baking. It helps mimic the binding and elasticity properties of gluten, improving the texture and structure of gluten-free baked goods.

Can I make the dough ahead of time and store it in the fridge?

Yes, you can prepare the dough in advance. After shaping it into a disk, wrap it tightly in plastic wrap and refrigerate it for up to 2 days before using it in the recipe.

I don't have Gruyer cheese. What other cheeses can I use?

You can substitute Gruyere with similar cheeses like White Cheddar, Swiss or Gouda. If you have dietary restrictions, consider using dairy-free cheese alternatives.

Why should I use Yukon Gold Potatoes?

Yukon Gold Potatoes are a medium size that lends well to use in the galette. They also have a waxy texture that stands up to sauteing and baking. Russet potatoes would end up mushy in this recipe.

I'm vegan. Can I make this galette without dairy and eggs?

Yes, you can make this galette vegan-friendly. Use dairy-free margarine or vegan butter for the dough, skip the egg yolk wash (use a dairy-free milk wash instead), and opt for dairy-free or vegan cheese alternatives.

How do I store leftover galette?

To store leftovers, wrap the galette in aluminum foil or plastic wrap and refrigerate for up to 2-3 days. Reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes until warmed through.

Can I freeze the galette for later?

Yes, you can freeze the galette. Wrap it tightly in plastic wrap and aluminum foil or place it in an airtight container before freezing. It should be good for up to 2-3 months. Thaw in the refrigerator before reheating.

Can I customize the fillings in this galette?

Absolutely! You can get creative with the fillings. Try adding sautéed mushrooms, spinach, roasted red peppers, or different herbs and spices to suit your taste.

What's the best way to reheat a slice of galette?

To reheat a slice, place it on a baking sheet and warm it in a preheated oven at 350°F (175°C) for about 10-15 minutes, or until it's heated through.

Can I make mini galettes instead of one large one?

Yes, you can portion the dough and filling to make mini galettes. Adjust the baking time accordingly, as they may cook faster than a single large galette.
