Prep the Gluten-Free Crust

- Prepare a single gluten-free pie crust according to the recipe found here.
- Roll out the gluten-free pastry dough to a thickness of about 1/8" into a circle approximately 14” in diameter.
- Line a baking sheet with parchment paper; Transfer the rolled out dough to the prepared baking sheet.

Prepare Ingredients

- Chop the onion
- Halve the cherry tomatoes
- Shred the lettuce and cheese
- Slice the green onions and black olives
- Chop the cilantro
- Dice the jalapeno

- Chop the onion
Cook the filling
-
- Heat olive oil in a skillet over medium heat. Sauté diced onions until translucent and slightly caramelized
- Add ground beef and taco seasoning. Cook until beef is fully browned.
- Add in the taco seasoning according to packet instructions

Assemble

- Drizzle on 1 tablespoon of olive oil on to the prepared dough, spread with a pastry brush leaving a 1-2 inch border
- Add a layer of refried beans over the olive oil
- Add the prepared ground beef
- Layer on all of the fixings: shredded cheese, halved tomatoes, sliced olives, diced jalapenos and chopped cilantro
- Fold the dough edges over the filling, pleating as needed. Brush exposed dough with half-and-half or egg white
- Sprinkle extra taco seasoning on the dough edge

Bake, Top and Serve

- Transfer the galette on parchment to a baking sheet. Bake at 375°F for 30–35 minutes or until crust is golden brown and cheese is bubbly.
- Let the galette cool for 5 - 10 minutes, then pile on all or none of the optional toppings to your liking - to each their own!
