Add the thinly sliced onions, herbs, and cook, stirring occasionally, until they turn a deep golden brown and become caramelized, about 30-40 minutes. Watch the heat to ensure you do not burn the onions. Lower the heat if necessary. Season with salt and pepper to taste. Set aside to cool.
Prepare the Ham and Cheese (While Caramelizing Onions)

While the onions are caramelizing in the skillet…
- Chop the cooked ham into quarter inch pieces. Set aside.
- Grate the cheese using a box grater. Set aside.
Assemble the Galette

- Preheat your oven to 375°F (190°C).
- On a sheet of parchment paper, roll out the chilled dough into a rough circle, about 14 inches in diameter.
- Carefully transfer the dough on the parchment to a rimmed baking sheet. Chill in the refrigerator for 10 minutes. Note that the dough will hang over the edges of the pan.
- Remove the dough from the refrigerator; Leaving a 2--3 inch border, spread the whole grain mustard evenly over the dough.
- Next spread caramelized onions over the mustard.
- Sprinkle ⅔ of the grated cheese over the onions.
- Arrange the chopped ham on top of the cheese.
- Sprinkle the remaining cheese over the ham.
- Lightly season with salt and pepper to taste.

- Fold the edges of the dough over onto the filling.
- Bake in the preheated oven for 25 minutes, or until the crust is golden brown.
- At the 25-minute mark, carefully crack two eggs on top of the galette. This will allow the eggs to bake on the surface, creating a beautiful presentation and a deliciously runny yolk, rather than mixing them into the filling.
